Broasted Chicken just like KFC

A succulent and scrumptious Broaster Chicken is the best remedy to get rid of all of your blues🍗🍗🍗

Ingredients:
tbsp = Tablespoon : tsp=Teaspoon : 1 cup= 240 ml
Marination:
10- 15 Chicken pieces
1 cup Drinking laban
2 tsp lemon
2 eggs
1 tsp salt
3/4 tsp Red Chilli powder
1/2 tsp white pepper powder
3/4 tsp Garlic powder
1/2 tsp Ginger powder
1 tsp Vinegar
Dry Mix:
2 cups Flour
1/2 cup Cornflour
salt to taste
2 tsp Red Chilli powder
1 tsp Black Pepper powder
1 tsp white pepper powder
1 tsp Garlic powder
How to make chicken broast list like KFC
Marination Mixture:
In a large mixing bowl, add 1 cup laban, 2 tsp lemon juice, 2 egg, 1 tsp salt, 3/4 tsp Red chilli powder, 1/2 tsp white pepper powder, 3/4 tsp Garlic powder, 1/2 tsp Ginger powder, 1 tsp Vinegar.
Mix until all the spices are well blended in curd.
Take 10-15 chicken pieces of your choice. With the help of a fork, prick tiny holes in the chicken pieces. This helps to marinate chicken deeply.
Marinate the chicken pieces and keep it in the refrigerator overnight or a minimum of 3 hours. I usually marinate overnight.
Coating mixture:
In a large bowl, add 2 cups all-purpose flour, 1/2 cup Cornflour, salt to taste, 1 tsp white pepper powder, 1 tsp Black Pepper powder, 2 tsp Red Chilli powder, 1 tsp Garlic powder
Mix well until the spices are evenly distributed and make sure there are no lumps in the mixture.

How to coat chicken pieces
Keep the chicken marination, Flour coating mixture and cold water in sequence.
Pick each chicken pieces and dip it in coating mixture then dip it in the cold water for 3 seconds, shake and again dip in the coating mixture.
Leave the marinated pieces for 5 minutes while the oil heats up. This will help the coating stick to the chicken better.
How to cook broasted Chicken
Heat oil to a heavy bottom pan on the medium flame.
Before frying drop a small portion of the wet mixture to the oil to check if the oil is hot enough. The temperature is right if it rises without browning.
If you have a thermometer you can also check.
Shake off the excess coating from the pieces before dropping it in oil.
Fry up to 15 minutes for the largest pieces and 8 - 10 for the smallest piece depending on size.
Fry them till it turns crispy and golden.

Place cooked pieces on a serving bowl with tissue so the tissue soaks all oil.
Let chicken drain on paper towels when it comes out of the wok.
Serve hot with your favourite chicken dip.
My Tips:
You can either use buttermilk or milk instead of drinking laban.
I prefer drinking laban than usual laban. As laban is usually thicker than drinking Laban.
Fry for up to 15 minutes for the largest piece s and 8 - 10 for the smallest piece depending on size and thickness. That's why chicken breasts and wings cook faster than legs and thighs.
If the flame is too high, it gets browned faster without getting cooked inside.
If you need to cook the chicken in multiple batches, always start with the latest pieces as it takes time to cook and end with the smallest piece of chicken as it cooks faster.
You can also store extra flour coating mixture in an airtight container for up to 3 months.
Chicken pieces are done when a meat thermometer inserted into the thickest part reads 165°F.
